Why it’s different
The manufacturing company, Terada Honke, was established in 1675. Since the young Toji Masaru Terada took the reins of the company, there has been a real shift towards a production philosophy that respects the past. Probably one of the most radical Kuras in Japan. This Katori 90 Nama Genshu is a Sake that we can qualify as Triple A. It comes from the Terada Honke brewery in Chiba prefecture located southeast of Tokyo. This Sake is a Nama Genshu that is; it is neither pasteurised nor diluted. A 'funky' version of Katori 90, Terada Honke's flagship sake. The ingredients and brewing methods are those of centuries ago, in the Pre-Modern period: rice, wild yeast, no pasteurisation or filtration, and brewed with a long fermentation method called Kimoto. The 90 in the name refers to the percentage of unpolished rice used in the production of this Sake, leaving a slight 10 % polish reminiscent of Sake from another century. An edition in limited quantities.
