Overview
HISTORY
The Roots project was born around mid-2013, from the desire of brothers Manos and Nikolas Smyrlakis to return to their roots ('roots', precisely), recovering the family heritage and recipes of the oldest distillery in Greece, Callicounis, active since 1850 in Kalamata. Thus was born a range of four premium liqueurs, handcrafted from unique and rare, strictly Greek ingredients, together with the Divino series, non-alcoholic wine-based aperitifs, in which the halo depicted on the label represents the 'divine' effect of being able to enjoy an alcohol-free occasion.
Roots are handcrafted and based on 100% ancient herbal remedies from Greece, which draw their origins from traditional recipes based on strictly local and all-natural ingredients, with no artificial flavourings or additives.
PRODUCTION METHOD
The production of Roots Divino begins with a classic red and white Vermouth, with absinthe, other Mediterranean botanicals and Greek wine. The next step is a very slow and complex process, during which the alcohol is slowly removed by means of reverse osmosis. In this way, it is possible to retain the original flavour and all the organic volatiles that, despite the removal of the alcohol, are still diluted in the organic matter, i.e. the grape juice derived from the wine. In the absence of alcohol, the taste and smell, body and palate of spirits are completely transparent. In other words, without the alcohol extinguishing the flavours or the weakness of the botanicals, the 0% product has to be really good to stand out.
The name Divino comes from here: Di Vino (from wine) and Divine, as in 'holy', without alcohol.
