The Linge family had helped us store Clairin in Port-au-Prince, bottle it and ship it, a job that was more difficult in Haiti than it might seem. From this collaboration, a deep friendship was born. Thus was born the idea of bringing discontinuous distillation rum back to Haiti and building a micro-distillery in their compound. Here, using a Müller still, we distill Providence and age it in the warehouses we created in the same place.

Story

Providence is produced by Herbert Linge, whose story is told in Luca Gargano's book, Nomad among the Barrels (Edizioni Velier, 2019): immediately after the war, Jane married a German perfume expert, Rudolf Linge, who had escaped from Nazi Germany, and the two decided together to produce rum. The meeting and friendship born with Velier thanks to their help in Haiti in bottling Clairins were decisive for the start of this new project, which aims to bring discontinuous distillation back to the country.

Production Method

Providence is a rum distilled from Cristalline sugar cane syrup from the grand terroir of Saint Michel de l'Attalaye, obtained by reduction over an open fire. The concentrated juice is transported to the Distillerie de Port Au Prince for addition to fresh cane juice. First Drops is the first version of Providence, which contains rums obtained from different types of fermentation, more or less short, to move to a bain-marie distillation in a copper discontinuous still, built by German Muller in collaboration with Gianni Vittorio Capovilla, one of the largest ever produced by Muller, for a capacity of 3000 liters. It features a main boiler and a small 8-plate column, of which Herbert Linge uses only 6.
