Walsh Distillery

Overview

History

Walsh Whiskey is a family-owned company that has been in business since 1999, created by husband and wife Bernard and Rosemary Walsh, and is leading the Irish whiskey renaissance. Its two ranges of exclusively premium and super-premium, triple-distilled Irish whiskeys Writers' Tears and The Irishman have long been critically acclaimed;

The aim is to reintroduce the old recipes from Ireland's golden age of whiskey, with the enthusiasm of those who also know how to question, create, experiment, challenge and, above all, improve. A goal that led to the production of the first Irish whiskey blends from premium Pot Still and Malt whiskeys - 'the champagne of Irish whiskey' - and then, in 2008, the first Irish Cask Strength of the new era;

Walsh Whiskey has also devised a range of refinements completely unprecedented for the category, achieving great results at its distillery, which is the largest manually operated distillery in Ireland, where all three styles of Irish whiskey are produced under one roof;

Production method

The Irishman range aims to rediscover Irish single malts, and focuses on blends and expressions of pure single malts: a true homage to the golden age of this whiskey. Irish barley, triple distillations and ageing in ex-bourbon and ex-Sherry Oloroso casks;

The Writer's Tears range is inspired by the golden period between the 19th and early 20th century in Ireland, famous for its writers and whiskey. At the time, the Irish Whiskey Barons were against the emergence of what they saw as inferior grains in Coffey Still, and pushed a style that was known as 'the champagne of Irish whiskey': a masterful blend of Pot Still and Single Malt, malted and unmalted barley, ageing in ex-Bourbon, ex-Cognac, ex-Sherry Oloroso casks."
