Abasolo

Overview

History

Abasolo is distilled from 100% Mexican Cacahuazintle white maize, which has been cultivated and passed down for more than 200 generations by local farmers for its unique and distinctive flavour. The distillery is located in Jilotepec de Abasolo, in the state of Mexico.

Production method

The deepest notes of ancestral maize emerge thanks to a special cooking technique dating back 4,000 years: nixtamalisation. This particular process, which involves soaking the maize in a highly alkaline solution, has long been present in typical Mexican cuisine, but had never been used in whisky production. The maize is then dried in hot air, ground and undergoes a slow fermentation. The double distillation takes place in copper pot stills. Abasolo ages in oak barrels, in an open-air, wall-less warehouse where temperature changes and variable weather give the whisky a unique profile;
