In 2017, Marco Callegari first tells me about this wonderful distillery in Ireland, where they plan to produce the first whiskey, without the e, single malt. The proposal is very interesting, but we have to wait until they are ready. So I come back to it at the end of 2019, and I get in touch with Romain Larcheron, who is in charge of its distribution. And so we start distributing Waterford in the first half of 2020.

Overview

History

The Waterford Distillery project is a brand new journey signed by Mark Reynier. The distillery has been in operation for a few years and only released its first bottling in 2020. It will release many each year, always from different producers and different barley vintages. Waterford is the name of the town in southern Ireland where the new whiskey distillery is located. A former Guinness brewing company, it overlooks with its large windows the River Suir, which flows through the town before emptying into the Celtic Sea to the south of Ireland.

Production method

Waterford, which launched its first whiskey in 2020, sources barley from 95 farmers in the southeast of Ireland. Each farmer has his or her own uniqueness: method of farming, location of his or her land, different varieties of barley. Waterford supports the agronomic work to have the best possible product, has it harvested and stored at warehouses that well separate each plot and each producer, and from there the grain-laden trucks head to the distillery.

Focus

In distilleria ogni lotto di cereali viene triturato, fermentato e distillato secondo un preciso calendario che rispetta i giorni di raccolta e la dimensione dei lotti di produzione di ciascun agricoltore conferitore. La fermentazione dura almeno cinque giorni, diversa in tempi/temperature per ogni lotto di cereali e per ogni annata di produzione. Il mosto fermentato passa al doppio alambicco di rame marca Forsyths “alla scozzese” dove una doppia distillazione porta il mosto a divenire spirito ad alta gradazione. La distilleria è moderna, computerizzata e l’imponente edificio che affaccia sul fiume che attraversa la cittadina di Waterford è un vero e proprio simbolo industriale irlandese della produzione di bevande. E’ qui, infatti, che fino a qualche anno fa sorgeva uno degli impianti produttivi di Guinness dell’Isola.

Il new make dei diversi lotti di cereale, dei diversi agricoltori, passa quindi all’invecchiamento. I whisky di Waterford sono ancora giovani e forse sono proprio i new make ad averci colpito di più. Profondità, eleganza, spezia e sapidità. Uno diverso dall’altro, nonostante la gradazione alcolica superiore ai 60%vol e la mancanza del legno ad ammorbidirli. Per la maturazione troviamo una piccola cantina, una cella situata sotto la distilleria che i lavoratori definiscono “sperimentali”. Qui, in piccole botticelle da 15 a 100 litri si sperimentano i legni più particolari. Mulberry inglese, castagno e ciliegio italiani, ex vini in fermentazione spontanea o con precedente lievito flor. Ma i magazzini principali si trovano a 10 minuti di auto dalla distilleria, vicino al mare. La sperimentazione non si ferma neanche in invecchiamento. Botti nuove, botti di primo e secondo passaggio e poi l’introduzione delle botti da vino con fermentazione di flor o spontanee. Al momento il prodotto più vecchio ha 4 anni, ha superato da poco lo scalino che gli permette di chiamarsi whisky, gli altri liquidi riposano in attesa della loro bottiglia. Un Single Farm whisky che mette al centro il cereale, il suo produttore, il terroir dell’Irlanda stessa. Un nuovo modo di vivere il whisky e le persone che lo circondano.
