These are the ingredients of Winestillery, a company that is founded on a project that is as simple as it is natural: to pay homage to the Chianti Classico region by creating products that encapsulate the terroir in all its nuances.  Each of these products has a natural wine base, in which fermentation takes place without the addition of selected yeasts.

Winestillery is a Winery and at the same time an independent artisanal Distillery, it is, in short, the first and only Vinstillery in the world, where wine is valorised through non-classically 'Tuscan' products such as Gin, Vodka, Vermouth.

HISTORY

A wonderful land, characterised by gentle hills crossed by unmistakable rows of cypress trees, and a family that has been in the wine business for two generations. All this is Winestillery, a company founded on a project that is as simple as it is natural: to pay homage to the Chianti Classico region by creating products that encapsulate the terroir in all its nuances. Each of these products has a natural wine base, in which fermentation takes place without the addition of selected yeasts.

Winestillery is a Winery, but it is also an independent artisanal Distillery: in short, it is the first and only Vinstillery in the world, in which wine is enhanced through non-traditionally 'Tuscan' products such as Gin, Vodka, Vermouth. Few things like wine succeed in representing so clearly the relationship that exists between human labour and the fruits of the earth.

Winestillery is a radical project, brought to life by the relationship between strong oenological knowledge and the art of distillation.

The company's Master Distiller is Enrico Chioccioli Altadonna, who gave up a promising career as a lawyer to follow his passion for distillation. After an initial experience in a Bourbon distillery in Brooklyn, Enrico studied distillation and oenology at the Cerletti School of Oenology in Conegliano and at the University of Bordeaux, absorbing the necessary notions and experience to create Winestillery, which also sees the participation of his brother Niccolò, Wine Production Manager.

PRODUCTION METHOD

Each Winestillery product is produced in small batches in the distillery in Gaiole in Chianti using Bacco, the 500-litre Pot Still copper pot still specially created by the Tuscan company Frilli. Bacco has been designed to distil both according to the Bennet method and with the Carter Head, so as to maximise the quality of the raw material in every nuance. Each product is rigorously natural, not added or corrected in any way, so as to maintain the maximum expression of purity.
