Why it’s different

Neisson Profil 105 is a surprising rum, despite a short barrel-ageing period, it is almost as complex as a vieux. Gregory Vernant Neisson has opened a new era in ageing. The barrels used to age Neisson Profil 105 are new, carefully chosen after numerous tests in collaboration with World Cooperage. The barrels are made of equal parts French oak and American oak staves that have been matured for at least three years. These barrels are previously used to hold white agricultural rums for about 4 months, a process that allows the release of excess tannins, as well as the bitter note of the wood that would be too strong for ageing in a tropical climate. They are then refilled with rum, which will rest for at least 18 months, thus becoming an 'elevè sous bois', one of the categories in the AOC Martinique classification. Profil 105, of which there is also a very rare version, benefits from all the characteristics of new wood and is an absolutely astonishing 20-month-old rum with an impressive taste profile for its young age.

How do I drink it?

It can be enjoyed neat or on the rocks; in blending it is an excellent base for Mai Tai.

La distilleria di Neisson è stata fondata nel 1932 dai fratelli Neisson presso il comune di Le Cabret, situato nel nord ovest della Martinica, zona perfetta per la coltivazione delle migliori canne da zucchero, vista la grande presenza di terreno lavico. Il proprietario Gregory Vernant Neisson è ormai l’ultimo master distiller proprietario dell’isola. Nei campi di proprietà la canna da zucchero viene raccolta a mano per preservarne la qualità. Neisson possiede ancora una parcella dove cresce la varietà di canna Cristalline non ibridata. Si tratta dell'unico ettaro di Cristalline a essere sopravvissuto al di fuori dell'incontaminata isola di Haiti. Oltre alla Cristalline, Neisson coltiva altre due varietà non ibridate, come la Malavoi e la Rubanée. Le tre varietà antiche, dopo una lunga lotta, sono entrate a far parte dell'AOC Martinique. Da qualche anno Gregory Vernant Neisson ha iniziato il complesso processo di riconversione di tutti i suoi terreni in agricoltura e oggi può fregiarsi del Label cosa unica nel mondo del rum. Neisson è anche pioniere in materia di invecchiamento, essendo il primo al mondo fra i produttori ad aver intrapreso l'utilizzo di botti nuove.
