Why it’s different

Neisson Cuvèe Speciale Tatanka "La Coupeuse" 2019 is the first edition to feature on the label the hand-drawn Tatanka-style drawing of the "coupeuse", the woman cutting the cane with a machete. It is an agricole rhum made from sugar cane harvested on the more than 45 hectares of Neisson property, cane that includes some ancient, unhybridized varieties such as Cristalline, Rubanée or Malavoi. The freshly cut cane is transported to the distillery where it is pressed the same day to keep all the characteristics of the fruit intact. They are pressed in three-roller mills driven by a steam machine equipped with a bagasse-fired boiler. The juice soaked in water passes into large open steel vats, where it ferments for at least 72 hours by urinating a yeast selected from a strain of leivitus isolated on sugar cane. Distillation takes place in a column, the splendid copper Savalle installed by Jean Neisson, Grègory's grandfather. The Cuvée Spéciale 2019 edition was bottled after a minimum of 4 years of ageing in a tropical climate at 45° in the traditional Zepol Kare bottle hand-painted by the artisans of the Tatanka atelier in Riviere Pilote in southern Martinique. A very special bottle used only for small numbers of limited edition bottles.
