Why it’s different
Bayou XO Mardis Gras is a rum produced in Lacassine (USA, Louisiana) from local sugar cane according to the strictest traditions. The cane is produced locally and the molasses used come from local producers. These include M.A. Patout, the oldest sugar producer in the United States (1829). Fine molasses are mixed with cane juice to start fermentation, which is activated by yeasts selected at the distillery. Fermentation lasts 28 to 30 hours. Bayou is then single-pass distilled in two copper pot stills. Bayou XO Mardis Gras was created as a tribute to the spirit of Mardi Gras, the closing day of carnival in Louisianna. Bayou XO is the oldest of the rums bottled by the distillery with Solera ageing for up to 6 years. After the 6 years, a finish in ex-sherry casks takes place, which gives a lot of balance, creating a combination of smooth and spicy aromas with a slightly smoky finish.
