Why it’s different

Bayou Single Barrel is a Pure Single Rum produced in Lacassine (USA, Louisiana) from local sugar cane according to the strictest traditions. The cane is produced locally and the molasses used come from local producers. These include M.A. Patout, the oldest sugar producer in the United States (1829). Fine molasses are mixed with cane juice to start fermentation, which is activated by yeasts selected at the distillery. Fermentation lasts 28 to 30 hours. Bayou is then distilled in single passage in two copper pot stills. Bayou Single Barrel is the distillery's expression of ageing in Ex-Rye Whiskey barrels for 2½ years, this type of wood, combined with the Louisiana climate, gives Bayou Single Barrel a slightly spicy, dry flavour.

How do I drink it?
