Why it’s different

Norman cider has existed in the Pays d'Auge for two thousand years. Christian Drouin's Cidre Brut de Normardie is made from the most aromatic of the 30 varieties grown in the Maison's orchards. The apples are carefully selected and washed and then crushed before a period of rest, a crucial moment for fixing the cider's colour and softening its tannins. The crushed apples undergo a soft pressing in the Champenois style, followed by spontaneous fermentation with the indigenous yeasts of the Drouin family's caves, a slow fermentation that benefits from the cold infernal days.

How do I drink it?

It can be drunk served in a wine glass like any sparkling or spumante wine. It is equally pleasant and complex, and can be consumed as an aperitif but also paired with different types of dishes. Total freedom for sommeliers, as well as for bartenders who use it in blending.
