Why it’s different
A rhum agricole élévé sous bois produced from sugar cane grown in certified organic agriculture in the distillery's plots at La Thieubert, Le Carbet, in north-west Martinique. After cutting, partly by hand and partly mechanically, the canes are brought to the distillery and pressed by the end of the day in mills driven by the steam machine, fed by the boiler that uses the 'bagasse' as fuel. Distillation takes place in the Savalle copper column. Aging is for 15 months in reconditioned ex-bourbon casks, with ageing in French oak barrels that have contained Neisson for several months.
