Providence Aged 3 Y.O.
Why it’s different
From the Distillerie de Port-au-Prince, in the heart of Haiti's capital city, comes the first Providence to be aged. The Cristalline sugar cane used for Providence rum comes from Michel Sajous in Saint-Michel-de-l'Attalaye, 150 kilometres to the north. Fermentation takes place with natural yeasts, allowing aromatic complexity to develop. The liquid obtained after fermentation is distilled in a bain-marie in a discontinuous copper pot still, built by Müller in collaboration with Vittorio Capovilla.
This Providence includes the first barrels aged, from number 3 to number 27, all ex-Caroni.
