San Venanzo
Overview
History
Azienda Agricola San Venanzo is located in the Matelica area, in the province of Macerata, at about 400 meters above sea level. The decision to reinvigorate an old Verdicchio di Matelica Doc vineyard dating back to 1972 and to recover the wild sour cherry gave a fundamental push for a new chapter in the history of this reality. Of the sour cherry, some native vines over 40 years old were recovered, and an ad hoc cultivation was dedicated to them. From experience and family tradition, V2 Vino di visciole was born in 2015, made from wild sour cherry and Verdicchio di Matelica grapes.
Production method
V2 is produced using traditional methods. Harvesting of the grapes and sour cherries is 100% by hand. The sour cherries are destemmed and then left to ferment spontaneously; maceration lasts two to three weeks and begins in summer; with the autumn harvest, white grape must from Verdicchio di Matelica Doc is added. Aging takes place in steel containers on fine lees and lasts one year. No filtration is done, and there is no addition of preservatives or sulfites.
