Van Wees
By Velier
It is the last distillery in the centre of Amsterdam, between the canals. Entering it feels like going back in time at least 100 years, among furniture, furnishings, old bottles, spices and copper stills. It is a company that has remained intact, famous for producing jenever and liqueurs in general following ancestral recipes. His father Van Wess, who passed away recently, was a great collector and expert. His daughter Funny - a great jenever expert - and her daughters continue to produce in the traditional way today. This company is part of the historical heritage of the metropolitan distilleries that have gradually disappeared.
Overview
History
Van Wees is a sotric distillery and liquor factory in the centre of Amsterdam. One of the oldest in operation and the home of Dutch genever and flavoured liqueur knowledge. Founded in 1782, A. Van Wees is also the last craft distillery based in the Amsterdam city area. It has become famous not only for this, but especially for its historical production of Jenever, 'the ancestor of Gin'.
Production method
Amsterdams Che Oude is a genever traditionally made from barley malt and herbs, which is left to age and refine for 6 months. Zeer Oude is a genever aged over a year in oak barrels, traditionally brewed from barley malt and herbs and distilled in pot stills. Dry Gin is an English-style gin from juniper berries and lemon peel. Yuzu is made from the Japanese citrus fruit of the same name. Hempye Lich OP is made from rose petals with vanilla bean. Tonka Bean is made from the infusion of tonka beans.
