Why it’s different
Clairin Sajous is produced in the grand terroir of Saint-Michel-de-l'Attalaye, about 4 hours off-road north of Port-au-Prince, from Cristalline: a native, unhybridised cane variety. Production involves zero chemistry in agriculture, spontaneous fermentation without selected yeasts, old distillation methods without filtration. The mother ingredient is then pressed in the small mill more gently than in the typical French Antilles way. Each récolte of Clairin Sajous is bottled at the grade at which it leaves the still.
